I took the Dog to the vet today to get his vaccinations renewed. I don’t know what I will do when I have kids if I get worked up over a couple of shots for my dog! But I stayed calm and happy for him and in turn we had no problems at all. It’s back to business as usual, which for him means sleeping on the kitchen floor while I bake.
A lazy Saturday morning calls for something that smells like cinnamon and nutmeg, and is impossibly fluffy and delicious. I have just the recipe to make your cinnamon fluffy dreams come true.
This oatmeal crumble coffee cake is begging to be paired with a hot mug of tea and eaten while reading the Saturday morning comics. It has a smile fluffy cake base with a dense oatmeal cinnamon sugar topping that just adds to the melt in your mouth allure it has going on. The recipe is not a vegan one, but is easily adaptable!
Pre-heat oven to 375 degrees and grease a 13×9″ pan
In a medium bowl combine the brown sugar, cinnamon, butter and mix in the oatmeal until crumbly set aside
In a large bowl mix together the egg replacer and water (or beat eggs) add milk and whisk together.
Add sugar, oil and vanilla to the egg replacer and milk mixture
In a separate bowl whisk together flour, baking powder, salt and nutmeg. Add it to the liquids, mix to combine.
Pour batter into pan and sprinkle the oatmeal mixture evenly on top.
Bake for half an hour or until a toothpick inserted comes out clean
