Basic Vegan Chocolate and Vanilla cupcakes

It is definitely fall now. The air is crisp, the morning light is beautiful and the Dog has all kinds of extra energy in the chillier weather. When the temperature dips all I want to do is turn on the oven and bake, and drink tea. But, I generally always want to drink tea. When baking it’s important to have the basics down, a basic chocolate cupcake and basic vanilla are key, they are the starting off point for so many delicious variations. The basics are also pretty darn delicious on their own. These are classy cupcakes.

For my lovely friend’s wedding I helped out by baking 50 cupcakes. The majority of those were your basic chocolate and vanilla! This chocolate cake recipe is the one that my mum has always made for me. I have tried other dairy and egg free chocolate cake recipes over the years and nothing has come close. It is a crazy simple recipe. You need water, cocoa powder, apple cider vinegar, baking soda, flour, vanilla, sugar and margarine. That’s all there is. So simple, and so delicious.

The vanilla cupcakes are similarly simple. Just flour, sugar, soy milk, cider vinegar, baking soda, canola oil, water and vanilla. Nice and simple, fluffy and delicious.

Vegan Chocolate Cake

1 1/2 cups flour
1 cup sugar
1tsp baking soda
1/3 cup cocoa powder
1 tsp vanilla
1 tsp cider vinegar
6 tbsp marg melted
1 cup water

    Set oven to 350.

    For a cake, bake in a 9 inch pan for 30 min.

    For cupcakes bake for 20 min.
    Vegan Vanilla Cupcakes

    2 1/2 cups flour
    2 cups sugar
    2 tsp. baking soda
    1/2 tsp salt
    2/3 cup canola oil
    1 3/4 cup water
    1/2 tsp vanilla
    2 tsp. cider vinegar
    2 tbl soy milk

      Set oven to 350
      Bake for 20 min.
      Makes a dozen and a half cupcakes.

      Basic Buttercream
      1/4 cup margarine
      1/4 cup shortening
      1-2 cups powdered sugar
      1 1/2 tsp vanilla
      Add soy milk until the desired consistency is reached

      * For chocolate buttercream add 1/2 cup cocoa powder
