I am in the midst of the February blahs. It’s cold and it’s dark and I just want to be wearing a bikini and laying on a beach somewhere! The solution? Chocolate, chocolate with a kick of cinnamon! Just look at them sparkling!
To start with I’m going to cream together (using my beautiful stand mixer) some oil, sugar, maple syrup and soy milk.
Add your dry ingredients, the usual suspects: some flour, salt, baking soda and a bit of cinnamon!
Spread cinnamon and sugar out on a plate and roll each cookie in the sugar mixture. I found that I had way too much of the mixture left over so you can probably halve it, or just make sure those cookies are coated!
Now that should warm up your cold winter night!
Recipe
1/2 cup canola oil
1 cup sugar
1/4 cup pure maple syrup
3 tbl soy milk
1 tsp vanilla
1 tsp chocolate extract (if you don’t have it just add more vanilla!)
1 2/3 cup flour
1/2 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Topping
1/3 cup sugar
1 tsp cinnamon
Directions
- Pre-heat oven to 350
- Cream together oil. sugar, syrup, milk and extracts
- Sift in the remaining ingredients stirring as you add them
- Mix together the topping and spread on a plate
- Roll dough into small balls and roll through the cinnamon sugar mixture
- Bake for 10-12min
