Strawberry Lemonade Cupcakes

According to the calendar it’s spring! According to the weather it is still February. I have decided to give the spring weather some encouragement with these summer time cupcakes. I say summer time, because strawberry lemonade screams summer time to me. It inspires thoughts of sun dresses, days spent by the pool and over sized sun glasses.
I got the inspiration for these from the coconut strawberry lemonade cake that I made for my sister’s birthday. That cake was a lot of work. If you want something similar but don’t feel like making your own lemon curd, this recipe is for you! It’s a simple lemon cupcake with the same strawberry buttercream we used on the coconut strawberry lemonade cake. I found this lemon cupcake recipe over at A Beautiful Mess. The great thing about the recipe is that it is already vegan! Just add your vegan strawberry buttercream and you are in business.
I will be back soon with an Easter specific post. I’m thinking carrot cake with cream cheese frosting and some light, fluffy, citrus cookies for my Easter desserts!
Lemonade Cupcakes
2 1/2 cups flour
2 cups sugar
2 tsp baking soda
1/2 tsp salt
2/3 cup canola oil
1 3/4 cup water
1/2 tsp vanilla extract
2 tsp apple cider vinegar
juice and zest from one lemon
