Homemade Vegan Cookie Sandwiches

Do you know how long it took me to realize that there is no milk in Oreos? Years. I’m talking about the age of nineteen. I finally decided to just check the ingredients on a bag of Oreos, because you never know right? And I found out that there was no milk! I had spent my entire childhood not eating Oreos for nothing! There is something truly delicious about two chocolate cookies with a creamy vanilla centre. So of course I had to try and make them myself!
They don’t look quite so perfect as the kind you buy in a store but they are every bit as delicious. In fact I might even go so far to say that they are more delicious.
 I found the dough a bit crumbly so next time I will add some more soy milk to make it a bit more malleable and easy to work with. Father’s Day is coming up and I am planning a dinner for my family. One of my absolute favourite things about the new apartment is how big the kitchen is. There’s plenty of room for me to cook and for everybody around the kitchen table. I love planning meals for people. I’m looking forward to a summer filled with dinner parties, brunches and barbecues in the back yard!
Oh and doughnuts. Definitely going to be making lots more doughnuts. I’m considering an attempt at frying doughnuts soon, I will let you know how it goes!
Chocolate Cookies
1 1/4 cups all purpose flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1/4 tsp salt
1/4 tsp baking soda
1/2 cup vegan margarine
3 1/2 tbl soy milk
1 tsp pure vanilla extract
Vanilla Filling
1/4 cup shortening
1/4 cup vegan margarine
2 cups powdered sugar
1 tsp pure vanilla extract
Directions: Cookies
Combine flour, sugar, cocoa powder, salt and baking soda
Add margarine, milk and vanilla
Mix together until a dough forms (Add some more soy milk if you need to)
Chill the dough covered in the fridge for one hour
Pre-heat oven to 350
Line a baking sheet with parchment paper
Roll small balls of dough and place them on the baking sheet, flatten each ball
Bake for 12 minutes
Directions: Filling
Beat together the shortening and margarine until smooth
Add powdered sugar and vanilla and combine
When the cookies cool coat the flat sides of the cookies with the filling and sandwich the cookies together!
