We got away this weekend. We escaped for two nights up north. We have both been working a crazy amount at our respective professions and getting away for two nights was exactly what we needed. We didn’t do much more then sleep, laze about and pop into the lake every now and then. Exactly what we needed. A part of getting out of the city is the long drive out into the country. When I was a little kid the drive seemed to take forever but now I actually enjoy it. I like watching the cement of the city give way to the sprawl of the suburbs, the housing developments getting replaced with endless farmers fields and the fields giving way to acres of trees and flashes of blue water through the trees. In order to properly enjoy a long drive you must have snacks. Of course I brought the essentials, cans of pop, bags of chips and candy. But I also decided to make something special for the drive. Intro these little melt in your mouth lemon cookies.
Buttery flaky lemon cookies sandwiching a silky lemon cream. Delicious! Perhaps not the most practical road trip cookie, what with the melting cream and sticky fingers but delicious none the less.
I found the recipe here and modified it to be vegan. I love citrus desserts in the summer time. There’s something so deliciously light and fresh about them.

The dog loves being up where he can roam free without a harness or leash. We had to remind him that the lake was in fact something he enjoyed. Once he got his feet wet he was happily running in and out of the water with his life jacket on (yes our dog has a life jacket, it’s a bulldog thing!)
Lemon and summer go as well together as a cold lake, bright blue sky and a bikini. They are just meant to be together! I’m back in the city now and feeling all the more ready to tackle life and my show! In my heart of hearts I’m really just a beach bum. I would be perfectly happy to spend all day every day swimming and sun tanning. Sadly that doesn’t seem to be a viable life plan. Maybe one day!
Veganized Lemon Melt in Your Mouth Cookies
7/8 of a cup vegan margarine
1/4 tsp salt
1/2 cup powdered sugar
1 1/2 cups flour
1/2 cup corn starch
1 tsp vanilla extract
Zest of one lemon
1 1/2 – 2 cups powdered sugar
1/4 cup vegan margarine (or shortening)
Juice of one lemon
Preheat the oven to 300
Cream together the margarine, salt and powdered sugar
Add the rest of the ingredients beating together on a low speed
Scoop tablespoons of the batter onto a prepared cookie sheet
Press the balls of dough down with a fork
Bake for 20min.
For the lemon cream just cream together all of the ingredients adding more sugar or lemon juice until the desired consistency is reached.
Once the cookies are cooled spread the cream on to the flat sides and sandwich them together!
I kept mine refrigerated to solidify the cream.
