It’s been such a long time since I posted a recipe! Life definitely got the better of me for the past two months. I produced a play for the very first time. It was an exhausting, exhilarating, frustrating, incredible experience! It also effectively took my entire life over for the past two months. I was also acting in the play so it was quite the balancing act. In the past two weeks since the show closed all I have done is eat, catch up on sleep, watch netflix and cuddle with the dog and boyfriend. It’s been wonderful. I am starting to come back to myself as evidenced by these delightful little sugar coma inducing delights.
Yummy pumpkin, cinnamon sugar deliciousness. Exactly what I needed after months of barely having time to eat a sandwich let a lone bake something delicious!
I modified the recipe from one I found on pinterest to make it vegan. And I decided to make both doughnut holes (using a mini muffin tin) and full sized doughnuts using my doughnut tin. The end result was beautiful.
If you are feeling decadent you can have an entire doughnut to yourself.
And if you just want a small treat you can grab a doughnut hole instead. Delightful! I always find I have left over cinnamon sugar so i just dumped it on top of them! They were also surprisingly quick to make which is an added bonus.
Seeing as it is well and truly fall now. It is time for soup, pumpkin spice and warm ovens. As much as I love summer I also adore the fall. The crisp air, the smell of fallen leaves, the incredible colours! It’s such a cozy time of year. All I want to do is go for long walks with the Dog and cuddle up on the couch with tea and watch scary movies. Expect many more regular posts to come!
Pumpkin Spice Doughnuts
1 3/4 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp all spice
1/8 tsp ground cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1/3 cup apple sauce
1 tsp vanilla extract
3/4 cup pumpkin puree
1/2 cup soy milk
1/4 cup melted margarine (for dipping)
2/3 cup sugar
2 tbl cinnamon
Mix together the flour, baking powder, salt and spices in a medium bowl
In a large bowl whisk together the remaining ingredients
Add the flour mixture to the wet mixture and mix until just combined
Grease a mini muffin tin or doughnut tin
*If using a mini muffin tin use only a tbl spoon of dough more then that and they will take on a muffin shape*
Bake at 350 for 10 minutes for doughnut holes or at 375 for 10-12 minutes for doughnuts
Insert a toothpick to check they are baked through (there should be no dough on the toothpick)
Let cool until you can handle them.
In a large ziplock bag mix together the sugar and cinnamon
Dip each doughnut into the melted margarine and then drop them a few at a time into the ziplock bag and shake to coat.
