It is a blizzard outside. It started snowing last night and it hasn’t stopped. This winter is truly insane! I know I can’t complain too much since I spent a week in the tropical sun, but mother nature, have mercy! To cope with the lack of sunshine and surplus of snow I have turned to an old standby. Chocolate.
I have read about all the mood boosting benefits of chocolate and I have decided that it is just what I need to get me through to spring. These brownies are of the ooey gooey variety. A melty, fudgey consistency. My mouth is starting to water just thinking about them. They are also very simple to throw together.
The edges get all crispy so you have the hard shell and the gooey middle. Delicious!
I plan on eating my fill of chocolate until I can look into my backyard and see flowers instead of an endless sea of white. I do however enjoy a good walk in the snow. This morning I took the dog on a nice early walk before everybody got up and started salting the sidewalks. There is something slightly magical about walking in a quiet city hushed by snow with the heavy flakes falling around you. I’m trying to look for the small pleasures in winter, since it certainly doesn’t look to be going away any time soon!

3/4 cup vegan margarine
1 1/2 cups semisweet chocolate chips
2 cups sugar
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup soy milk
1 tbl pure vanilla
Preheat oven to 350
Lightly grease a 9×13 inch pan
In a microwave melt the chocolate chips and margarine together
In a large bowl mix together the sugar, flour, cocoa powder, baking powder and salt
Add the melted chips and margarine to the flour mixture
Mix until a crumbly consistency forms
Add soy milk and vanilla
Beat together until well combined
Pour batter evenly into prepared pan
Bake for 45min
When you take the brownies out they will still be bubbling that’s ok! Leave them on the counter to set and cool before cutting.
