These cookies are kind of like my baking origin story. I had been raised by a father who cooked amazing meals and a mother who baked delicious desserts. So I had no great burning desire to cook or bake while I lived at home. I always had delicious food available. One Christmas my cousin and his wife gave me a gift of the recipe for chocolate chip cookies and all the dry ingredients. One day in the summer of my last year at university I looked at the recipe and the dry ingredients in their pretty jar and thought, how hard could this be? I decided to bake them and they were delicious. This is that recipe.
These cookies have also become a Christmas tradition. For many years now I have baked a batch of these for Jeremy’s youngest brother. He will not eat these cookies at any other time of year, nor will he allow anybody else to bake them. They have become a tradition between the two of us and one that I treasure. These cookies are comfort and family. The recipe makes about two dozen if not more depending on how small you make them. They are filled with sugar and margarine and certainly not healthy but they are delicious. Soft inside and a little bit crispy on the outside, they quite literally melt in your mouth.
These cookies are always a hit. They are sweet and melty and delicious. They are winter cookies for sure, the kind you grab in a stack, with a cup of hot tea and a good book and settle in for a cozy afternoon.
You can practically see the sugar sparkling off these cookies, with the chocolate peaking out. I pretty much always have chocolate chips in my fridge, there are so many things you can make with chocolate chips. Ganache, cookies, brownies, truffles, so many options!
They look extra sweet when wrapped up in a cute bag to give as a gift. Lightly browned on the bottom, cracked on the top, studded with chocolate chips. Be prepared to have everybody harass you for the recipe when you bring these to a party.
Chocolate Chip Cookies
- 4 1/4 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 cups margarine
- 1 1/4 cup sugar
- 1 1/4 cup brown sugar
- egg replacer equivalent to 2 eggs
- 1 tbl vanilla
- 1 cup chocolate chips
Heat oven to 375 and line cookie sheets with parchment paper
In a large bowl cream together the margarine and white and brown sugar
Add egg replacer and vanilla and mix to combine
In a medium bowl combine flour, baking powder and baking soda, add to the margarine mixture and combine
Fold in chocolate chips
Scoop dough by the tsp onto the prepared baking sheet and bake for 10min
