These cookies are the perfect snowstorm cookie. The outside is all powdered sugar like freshly fallen snow, the inside is all deep chocolate like a cup of hot cocoa. Yes, I said deep chocolate. These cookies have deep layers of chocolatey goodness. They are sweet and a little bit chewy and straight up delicious.
They are the best things about a snowstorm. You know when you were a kid and a snowstorm was announced? When you woke up and the snow was falling thickly you would sit at the kitchen table, listening to the radio, desperately hoping your school would be one of the ones closed? These cookies remind you of the magical days when your school was announced, when you had an entire unexpected day off! Unexpected days off are probably one of the most enjoyable things in the world. There’s no pressure to be productive or make plans, because you didn’t know it was coming! You can just wallow in the awesomeness of daytime television, spending unending hours on pinterest, or go on an unexpected adventure around your city.
As much as I complain about the cold and the snow as an adult, as a kid it really did make the world a more magical place. I was lucky enough to have a gigantic backyard growing up, my sister and I would get bundled up into our snowsuits, go out the back door and play for hours. We were intrepid arctic explorers, or ice princesses (I can only imagine the games we would have played if Frozen had come out when we were little) we built snow forts and fought valiant battles from them. On weekends we would get to go to the hill and go tobogganing, careening down the hillside screaming all the way. Afterwards we’d be bundled up at home, our cheeks pink and stinging from the cold a hot mug of cocoa (dairy free!) in our hands. The very best of winter was spending a few days of March break up at the cottage. We would huddle by the woodfire in the mornings, spend the days skating on the frozen lake, running through the woods having wild snowball fights with our cousins, live without running water for the duration of our stay. I guess all this is to say, let’s take a bit of the magic of winter back. Let’s stop complaining and start playing again. Oh, and eat cookies. That’s the best place to start.
Chocolate Crinkle Cookies
Adapted from “Vegan Cookies Invade Your Cookie Jar”
- 3/4 cup powdered sugar
- 1/4 cup sugar
- 3/4 cup sugar
- 4tsp coconut oil
- 4 tsp melted margarine
- 2 tbl corn syrup
- 1/3 cup coconut milk
- 1 tbl ground flax seeds
- 1/2 cup chocolate chips melted
- 2 tbl cocoa powder
- 3/4 tsp baking powder
- 1/4 tsp salt
Preheat oven to 325 and grease two baking sheets
Sift the powdered sugar onto a large plate and the regular sugar into a bowl, set aside.
In a large bowl beat together sugar, oil, margarine, corn syrup, vanilla, coconut milk, flax seeds and melted chocolate until smooth.
Add in the flour, cocoa powder, baking powder and salt and mix until the dough forms.
A tablespoon at a time roll the dough in a ball and roll it first in the regular sugar and then in the powdered sugar. Do not be stingy with the powdered sugar! If you don’t thoroughly coat the cookies, the powdered sugar just melts in and doesn’t create the proper effect.
Place the cookies 2″ a part on the baking sheet.
Bake for 14min, the cookies should have a cracked appearance!
