These are life changing pancakes. Seriously. You will eat these pancakes and never want to eat another kind of pancake ever again. The fiancé took one bite and looked at me with joy in his eyes and said, “These are the best pancakes I’ve ever had.” That’s right. The best pancakes ever, in his entire life. That’s saying something. I tossed some chocolate chips into half the batch because banana and chocolate just go oh so well together, but left the other half au natural.
With and without chocolate chips these pancakes are to die for. They are light and fluffy and they fry up so perfectly golden. Yet another magical use for overripe brown bananas. Overripe bananas are things of beauty. Banana bread, banana muffins, banana cupcakes, banana pancakes! The options are endless. I was so pleased with how these pancakes that this will now be my go to pancake recipe.
Pancakes have such positive associations for me. They mean lazy mornings, they mean big family breakfasts at the cottage, they mean time to breathe. You don’t make pancakes when you’re going to run out the door to work. You make pancakes when you have time to drink several cups of tea, a glass of orange juice, sit and talk and soak up the morning sun. Pancakes are for family time.

Vegan Banana Pancakes
- 1 1/2 cups canned coconut milk
- 3 tbl lemon juice
- 1 tsp vanilla
- 1 overripe banana
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbl sugar
- 3 tbl margarine
In a bowl whisk together the coconut milk and lemon juice, set aside to curdle.
Mash or blend the banana until smooth.
In a large bowl combine the flour, salt, baking powder, baking soda and sugar.
Add the banana and vanilla to the curdled coconut milk. Whisk to combine.
Add the wet ingredients to the flour mixture and combine.
Melt the margarine and pour it into the batter, stir until it is incorporated in the batter.
Grease a frying pan and pour batter a half cup at a time onto the pan, flip the pancake when it starts bubbling. Add chocolate chips or whatever your heart desires.
Keep warm in the oven while you finish the batter.
