Soft and Chewy Chocolate Chip and Crushed Oreo Cookies

Here it is! The promised recipe. I was inspired by this recipe over at Joy The Baker. Crushed oreos and cream cheese? That’s the stuff that cookie dreams are made of. I took my favourite chocolate chip cookie recipe and adapted it to fit the needs of these cookies. It worked, oh boy did it ever work. These are (according to the fiancé) the best cookies I have ever made. And I have made a whole lot of cookies in our ten years together.

Full disclosure, nothing about these cookies is good for you. I mean they are good for your tastebuds, good for your overall sense of well being and happiness. But they are loaded with fats and sugars. They are meant as dessert, delicious, decadent, gooey, chewy dessert.

These cookies are perfect for days or weeks when life seems unfair or downright cruel. These cookies can lift your spirits, or give them as a gift! I carefully saved two of these cookies and brought them to my mother for mother’s day. These are definitely good mother’s day cookies. Warm and comforting like a mother’s love! Especially if like my Mum, your Mum inspired you to bake. My Mum deserves all the cookies all the time, you will never find a woman more selfless, more thoughtful, more kind and intuitive than my mother.

Look at those chocolate chips and oreo chunks just bursting out of the cookie dough! How can you look at this picture and not want to eat all of the cookies? I used a new vegan cream cheese that I hadn’t tried before, it was yoso brand. I thought it was fantastic. I will have to try the Daiya brand again to compare the two, but either one gets top marks in my books.

I couldn’t decide what to call these cookies so I originally called them death by cookies, since they are so good you’ll want to die. The Yoso one I used was just called a fermented soy spread, but it worked just like cream cheese. It’s the cream cheese that keeps these cookies so soft and pliable, they always have the consistency of cookies straight out of the oven. I think we can all agree that eating warm cookies straight out of the oven is one of the greatest things in life.

I encourage you to crush up some oreos, buy some vegan cream cheese and make these amazing cookies. You probably saw your Mum yesterday but bring her some regardless, she no doubt deserves it! Happy Belated Mother’s Day!

Chewy Chocolate Chip and Crushed Oreo Cookies

  • 4 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cups margarine
  • 3/4 cup vegan cream cheese
  • 1 1/4 cups sugar
  • 1 1/4 cups brown sugar
  • 2 tsp egg replacer
  • 4 tbl warm water
  • 1 tbl vanilla
  • 1/2 cup chocolate chips (I used chocolate chunks)
  • 1/2 cup crushed oreos

Directions

In a medium bowl whisk together the flour, baking soda and baking powder. Set aside.

In the bowl of your stand mixer cream together the margarine and cream cheese. Add the sugar and brown sugar and cream until smooth.

In a small bowl combine the warm water and egg replacer and whisk until incorporated. Add the egg replacer to the sugar mixture. Add the vanilla and combine.

Slowly add the flour mixture, mix to combine.

Crush the oreos in a blender or by hand and fold into the dough. Fold in the 1/2 cup of chocolate chips.

Cover and refrigerate for an hour.

Pre-heat oven to 375 and grease two baking sheets.

Scoop the dough by the tablespoon onto the prepared baking sheets.

Bake for 10min
